The delicate back-flavor from Spain's finest dry-smoked sweet chilies give our Ahumado a mild and sweet smokey edge. Our heritage breed pork, and the delicacy of our curing process are accentuated by the subtle smoke. Ahumado is fermented at low temperature, aged for weeks in our custom chamber, and ship to you in a protective vacuum pack, wrapped in butcher's paper. Our cured products are shelf stable, but we recommend storing Ahumado in your refrigerator to best preserve quality.
