Sub Rosa Finocchini are rich and mild. Like our larger finocchiona, finocchini celebrate the superior quality of our heritage breed pork, and the delicacy of our curing process. We mix a generous handful of precious Italian fennel pollen into each batch, with crisp white wine, garlic, and touch of white pepper. Our finocchini are fermented slowly, aged for weeks in our custom chamber, and ship to you in a protective vacuum pack, wrapped in butcher's paper. Our cured products are shelf stable, but we recommend storing finocchini in your refrigerator to best preserve quality.
