Cacciatore Salami has a clean, bright profile. We use fresh rosemary from just outside our back door, garlic, Chianti, and a hint of Italian chilis to give the cure an uncluttered flavor that highlights the quality of our pork. Our Cacciatore is fermented at low temperature, aged for weeks in our custom chamber, and comes to you in a protective vacuum pack, wrapped in butcher's paper. Our cured products are shelf stable, but we recommend storing Cacciatore in your refrigerator to best preserve quality.
