Finocchiona, a traditional Tuscan salami, celebrates the superior quality of our our pork, and the delicacy of our curing process. We mix a generous handful of precious Italian fennel pollen into each batch, with crisp white wine, garlic, and touch of white pepper. Finocchiona is fermented at low temperature, aged for weeks in our custom chamber, and comes to you in a protective vacuum pack, wrapped in butcher's paper. Our cured products are shelf stable, but we recommend storing Finocchiona in your refrigerator to best preserve quality.
