Our Saucisson Provençal owes its delicacy to a subtle blend of dried herbs; savory, basil, thyme, and a touch of aromatic lavender. Rosé wine, white pepper and garlic complete the scene. Saucisson Provençal is fermented at a lower temperature than its Italian and Spanish cousins, and aged in our custom curing chamber for weeks. It comes to you in a protective vacuum pack, wrapped in butchers paper. Our cured products are shelf-stable, but we recommend storing Saucission Provençal in your refrigerator to best preserve quality.
