Our newest flakey shortbread cookies are made with lemon juice, lemon zest, ground ginger, and candied ginger. They are inexplicably light and rich at the same time. Our Lemon & Ginger Shortbread Cookies are knife-cut by hand, and baked in small batches, as they should be.

These deserve more than 5 stars! They are the best I have ever had, so light and flavorful. Love the little bit of chewiness you get with the ginger too. Perfect with tea.
